Spring is finally in full bloom and that means it is time to start harvesting asparagus. This delicate vegetable is loaded with flavor and nutrients. Asparagus is versatile, so it is able to be prepared in many different delicious ways. But what protein is best with asparagus? Well, asparagus is excellent with steak and shrimp, but this can get expensive when feeding a family. What about a less expensive option that will satisfy the family and won’t break the bank? The answer is turkey steaks, a fantastic alternative that is a perfect companion for your fresh asparagus.
Turkey Steaks and Asparagus Serves: 4
Cooking Time: 30 minutes
Ingredients:
- 4 4oz. turkey steaks
- 4 teaspoons butter
- white asparagus (or green if you don’t have white), trimmed
- 4 tablespoons crème fraiche
- 2 teaspoons lemon juice
- 3lbs. yellow peeled potatoes (small, if large cut in half)
- 1 teaspoon corn flour
- 2 tablespoons olive oil
- A handful of fresh basil, chopped
- Salt and pepper, to taste
Directions:
- Trim the asparagus, removing the wooden ends.
- Cook the asparagus in salted water for 15-17 minutes over medium heat or until tender.
- In a separate pot with salted water, boil the potatoes for 20 minutes or until tender. Drain and place aside.
- Drain the asparagus and save one cup of cooking liquid.
- Place the cooking liquid in a sauce pot. Add the crème fraiche and bring to a boil and whisk in the corn flour.
- Stir in the butter and chopped basil. Save some basil for a garnish. Simmer gently until butter is melted. Toss in the asparagus and give it a good but gentle stir so they are coated nicely.
- Place the sauce aside and prepare the turkey.
- Heat olive oil in a large skillet. Season the turkey steaks with salt and pepper. Once the oil is hot, cook the turkey steaks over medium heat for 3 minutes on each side or until golden-brown.
- Serve the turkey steaks with asparagus, potatoes, and prepared sauce (guests may use the sauce as desired).
