Is your 3.14 repeating? Do you need something delicious to take the edge off of all you wild calculations? Well here is your answer: Sweet Potato Pie. International Pi Day would not be complete without one of grandma’s best creations. Math buffs and dessert fanatics may disagree on some issues, but everyone is happy with Sweet Potato Pie on Pi Day!
Serving suggestion: 1 pie for 8 people
Time: 60 minutes
Sweet Potato Pie Ingredients:
– 1 cup mashed sweet potatoes
– ½ cup softened butter
– ½ teaspoon ground nutmeg
– 1 teaspoon vanilla paste
– ½ teaspoon lemon extract
– 4 tablespoons corn syrup
– 1 ¼ cups brown sugar
– 3 tablespoons all-purpose flour
– ¾ cup evaporated milk

Sweet Potato Pie Directions:
- Preheat oven to 350F.
- In a bowl, whisk the flour, nutmeg, and sugar.
- In a separate bowl mix the mashed potatoes, eggs, corn syrup, vanilla paste, lemon extract, and butter.
- Fold in the flour mixture and stir until blended thoroughly.
- Gradually whisk in the evaporated milk until the mixture is smooth.
- Place the pastry shell in a pie plate and pour in prepared sweet potato mix.
- Bake the pie for 60 minutes and place on a wire rack to cool completely.
- Slice and serve with a dollop of whipped cream.
