Kale Cashew Medley Recipe

You may be aware that kale is highly nutritious and relatively inexpensive. What you may not have noticed is that kale is delicious and can be prepared many different ways. This is a simple kale dish that I concocted through some trial and error. The dish uses only one pot and can be prepared in less than 20 minutes, two of my favorite characteristics of meals I make at home. It can be served as a side but is hearty enough to be a whole meal.

The recipe…

Gather:

  • 2 Strips of Bacon (only omit in extreme cases)
  • 1 Medium Onion of choice (I often use a red onion)
  • 2-3 Table Spoons to taste of either soy sauce, Teriyaki, or something sweet (a sesame ginger marinade, something with honey, etc.) Perhaps something like Soy Vey Teriyaki would be ideal
  • 3-5 Sections of garlic minced
  • extra virgin olive oil (the proportions of olive oil vary from two table spoons to a glug or two depending upon bacon use)
  • 2 heaping handfuls of raw cashews
  • 1 bunch of Kale
  • Cream Sherry
  • Spices (a dash or more):

-Black Pepper

-Roasted Ginger

-Salt to taste

 

Cut center stems out of the Kale, rinse, and put aside. Chop onions and mince garlic and set aside.

Lightly crisp bacon in a large pan and remove. Keep the grease in the pan. Start adding your onions into the pan on a medium heat. Sautee onions for 5-10 minutes until they begin to soften. Then start adding the kale. Sautee the Kale for 5-10 minutes and then add the garlic. After a few more moments add the Teriyaki sauce (soy or substitute).  Next add cashews. Then add the spices. Cook until the Kale softens. Add some extra virgin olive oil if it appears to be too dry. Now it is time to reintroduce the bacon. Chop bacon and mix in. Mix everything together well and turn up to a high heat. Hit is with a dash of cream sherry which will tie the flavors together. Reduce temperature to a simmer.

Serve.

    Yum…and I have a garden full of kale and kale now growing like a weed outside the garden + soon bacon from a friends pig…mmmm Do you have a sherry you would recommend? And let me know if you need any kale! I did dry some too.

    Now am making apple sauce and will do apple butter in crock pot (after using White Mountain Apple Peeler Corer and Slicer). Apples galore this year.
