As if regular nuggets weren’t seductive enough, let’s make coconut ones!
Once in a while, you just have to give into that crispy Southern seduction of that crunchy texture that only fried food can deliver. And if you are going to do that, then you might as well go decadent and add the coconut. This is a good idea because coconut is so delicious but also we have learned how good it can be for you. The addition of this ingredient really is a game changer. It adds a complex layer that is worth the trouble. These nuggets are easy to make but they are memorable.
Coconut Chicken, here we go, there’s no turning back now.
Serves 2 to 4 hungry people.
Prep time: 20 minutes
Coconut Chicken Nuggets Ingredients:
– 4 medium-size chicken breasts, cut into bite piece sizes
– 1 cup coconut flour
– 3 tablespoons garlic powder
– 1 tablespoon onion powder
– 2 teaspoons chili powder
– 2 eggs
– Fresh ground salt and pepper – to taste
– ½ cup vegetable oil, or coconut oil – for frying
Coconut Chicken Nugget Directions:
1. In a shallow dish combine coconut flour, garlic powder, onion powder, chili powder, salt and pepper.
2. In another bowl whisk the eggs.
3. Place the oil in the frying pan over medium-high heat.
4. Dip the chicken bites in the eggs and then in the coconut flour mixture and coat well.
5. Fry the chicken bites in the heated oil until golden, about 8-10 minutes.
6. Set the chicken bites in a bowl lined with the paper towel.
7. Serve while still hot.
