June is National Dairy Month and there is no better way to celebrate than with some delicious cheesy goodness (but a strong case could be made for ice cream). This recipe is a twist on everybody’s favorite gooey, cheesy treat: pizza. These are easy to make pizza muffins that are an ideal snack to send with the kids for their lunch at summer camp or to have as appetizers for your next shindig. The recipe uses both parmesan and cheddar, which ensures a deep cheesy flavor in every bite.
Serves: 12 muffins
Time: 40 minutes
Ingredients for Cheesy Pizza Muffins:
- 1 ½ cups all-purpose flour
- 4 eggs
- ½ teaspoon baking soda
- ½ cup tomato sauce(or pizza sauce)
- 1 cup grated Parmesan cheese
- 1 cup grated Cheddar cheese
- pepperoni cut into slices or small cubes
- 1 pinch salt
Directions:
- In a food blender combine the flour, salt, and baking soda.
- Add eggs, one at the time, pulsing after each addition. Then add half of the tomato sauce and pulse until blended.
- Once blended, stir in half of the pepperoni, cheddar, and parmesan cheese.
- Preheat oven to 350F and line 12-hole muffin tin with paper cases.
- Spoon the prepared batter into paper cases and bake for 25-30 minutes.
- Remove from the oven and top with the remaining sauce, pepperoni, and cheese.
- Bake for 10 minutes more and serve the pizza muffins while still hot.
