Just because spring is in bloom, it does not mean that you have to turn your back on the goodness of soup. This simple recipe produces a healthy and satisfying soup that is perfect for the season. This soup is especially easy on digestion and can be made vegetarian or vegan with some simple alterations.

Broccoli Apple Soup Ingredients:
– 2 heads broccoli, with stems
– 1 cooking apple, peeled, cored and chopped
– 1 yellow onion, diced
– 3 cups stock, chicken or vegetable
– 2 tablespoons ghee
– 2 strips lemon peel
– 1 cup unsweetened apple juice
– 2 sprigs thyme
– Salt and pepper, to taste
Directions:
- Separate the broccoli florets and the stems.
- Roughly chop the broccoli florets.
- Process the stems in a food blender until you have a grainy rice-like structure.
- Melt the ghee in a saucepot over medium heat. Add the onion along with apple and reduce heat to low. Cook stirring until softened, for 8-10 minutes.
- Add the broccoli florets and stems. Pour in the apple juice and stock of your choice.
- Add the thyme and lemon peel. Bring to boil and once boils reduce heat to medium-low. Simmer contents, covered for 25 minutes.
- Remove from the heat and discard the thyme and lemon peel. Using an immersion blender puree the soup until smooth.
- Return the soup over heat, adjust the seasonings and reheat. Serve after with bread or crackers.
