Gluten-Free Flourless Chocolate Cake

Are you tired of shoveling snow and shivering while running your errands? Does winter have you feeling down? There is a quick fix for the February Blues: chocolate. The wise people who create the seemingly unending cycle of national food holidays have hit the jackpot by naming February “National Chocolate Lover’s Month.” Celebrate National Chocolate Lover’s month with a delicious twist on chocolate cake. This flourless chocolate cake is gluten-free so it is an option that will appeal to a wide range of guests. With only an hour to prepare this decadent dessert, it is a quick and simple way to have a tasty homemade cake from scratch.

Serving: One gluten-free chocolate cake serves ten people
Time: 60 minutes
Ingredients:

–              6 whole eggs

–              1 ½ cups sugar

–              8oz. quality bitter-sweet chocolate

–              1 cup unsalted butter, cut into pieces

–              1 cup cocoa powder

–              1 pinch salt

–              1 teaspoon orange extract

–              ½ teaspoon vanilla extract

Directions:
  1. Preheat oven to 350 Degrees Fahrenheit.
  2. Grease 9-inch spring-form pan and additionally line with parchment paper (or thoroughly grease pan if you do not have parchment paper) to prevent sticking.
  3. In a double-boiler melt the chocolate with butter. Stir until completely melted.
  4. Remove from the heat and whisk in the sugar. Once the sugar is dissolved, whisk in the eggs one at the time. Then whisk in the extracts.
  5. Sift in the cocoa powder and whisk until combined.
  6. Pour the mixture into prepared pan and bake for 40 minutes or until inserted toothpick comes out clean. Remove from the oven and allow cooling for 10 minutes.
  7. Remove from the pan and slice before serving.
